Orange Peel Candy`midsummer Ingredients: 6 oranges 1 1/2 c. sugar 3/4 c. water 1/2 c. sugar Preparation Instructions Cut the peel of each orange into 4 sections and carefully remove with fingers. Scrape the white membrane off the peel with a spoon. The peel will appear porous. Cut the peel lengthwise into 1/4-inch wide strips. Put peel into medium saucepan and put just enough water in to cover the peels. Bring to a boil, then lower heat and simmer for 30 minutes. Drain and repeat. Heat 1 1/2 c. sugar and 3/4 c. water to boiling, stirring constantly, until all the sugar is dissolved. Add the peels and reduce the heat. Simmer, uncovered, for 45 minutes, stirring occasionally. Drain, roll the peels in 1/2 c. sugar, then spread on wax paper to dry.
