I made this for our Full Moon ritual the other night, and it was quite good.... IRISH SODA BREAD 4 cups stone ground whole wheat flour 2 cups unbleached all-purpose flour 1 tsp salt 1 1/2 tsp baking soda 2 cups buttermilk 2 tbsp butter 3 tbsp honey preheat oven to 425 degrees. Mix dry ingeredients, cut in the butter. Gradually mix in the milk, knead very briefly. Form a boule, then flatten on a dusted peel into a disc about 1 1/2" thick. With a floured knife, cut an equilateral cross almost through, so the loaf will break easily into quarters when done. Bake at 425 for 25 minutes, reduce heat to 350 degrees, and bake for another 15 minutes. Cool on a rack until set, about 6 hours. If crust is too hard, wrap in a damp bread cloth.
